Ben, who has worked at top restaurants including Brasserie 1016, will create his own signature dishes and cookery style for a foodie lovers evening and said:
“I started Chef in the Wood because I wanted to help people eat more locally, seasonally and sustainably. Having built a career working in celebrated restaurants, I have gained a wealth of knowledge about sustainable food production forging links with local suppliers. I have created delicious wholesome dishes to accompany the season.”
The three starters are: Cream of Stinging Nettle Soup; Purple Sprouting Broccoli and Anchovy Dressing; or Pigeon and Ox Tongue Terrine with hot toast and caramelised onions.
Main courses include Chargrilled Chicken Breast, Crushed Jersey Royals, Wild Mushrooms and Nettle Cream; Cornish Line Caught Mackerel fillet with roast cauliflower, red onion, parsley and capers or Warm Salad of Roasted Jerusalem Artichokes, red onions, olives and watercress (also available with slow roasted leg of lamb.
Desserts feature chocolate orange and walnut brownie with Cheshire Farm vanilla ice cream; rhubarb and custard trifle; or a selection of local cheeses with Chef in the Wood fruit chutney and cheese biscuits.
